Apple Sesame Cedar Canyon Chicken Minute Medallion Salad

A refreshingly crisp chicken salad with Sesame dressing, apples, carrots, and shiitake mushrooms

Ingredients

12 oz Cedar Canyon Chicken Minute Medallions
6 oz sesame dressing, divided
2 oz shiitake mushrooms, julienne, sautéed
4 oz Granny Smith apples, julienne
4 oz carrots, julienne
12 oz butter or Boston bibb lettuce, cleaned
  As needed Diamond Crystal Kosher Salt
  As needed white pepper
  As needed sesame seeds, toasted

Instructions
  • Sauté or flash fry Cedar Canyon Chicken Minute Medallions until fully cooked. Drain and reserve in a mixing bowl.


  • Add shiitake mushrooms, apples, and carrots, the toss with 3 ozs. of sesame dressing to coat evenly.


  • In a separate bowl, toss lettuce with remaining dressing and season to taste.


  • Arrange salad in serving bowls and top with chicken, vegetable, and apple mixture. Garnish with toasted sesame seeds.
